Ingredients
- 16 oz cooked boneless, skinless chicken breasts, thinly sliced
- 4 cups Napa cabbage, thinly sliced
- 1 cup carrots, matchstick-cut
- 1 bell pepper, thinly sliced
- 4 scallions, thinly sliced
- 1/4 cup reduced sodium soy sauce
- 1 tbsp sesame oil
- 1 tsp ground ginger
- 3 tbsp fresh squeezed lime juice
- 1/4 tsp black pepper
Instructions
- In a large bowl, whisk together the sesame oil, lime juice, soy sauce, ginger, and pepper.
- Add in the remaining ingredients and toss well to coat.
- NOTE: When cooking chicken you can prepare it how you like it. I
sautéed mine with a bit of non-fat cooking spray, and some extra lime
juice and soy sauce.
