Ingredients
- 300g strawberries, hulled and chopped
- 250g 0% Fat Greek yogurt
- 200g low fat soft cheese
- 3tsp vanilla extract
- 25g caster sugar
- 4 Weight Watchers Oat Digestive Biscuits

STEP 1Crush strawberries with a fork until roughly mashed, then set aside.
STEP 2
Beat together the yogurt, soft cheese, vanilla extract and sugar until smooth.
STEP 3
Add in the strawberries.
STEP 4
Pour the mixture into an ice cream maker and churn according to manufacturer’s instructions or until it’s desired consistency.
OR
If you don’t have the ice cream make, pour the mixture into a freeze proof container and place in the freezer. Every 2 hours, beat the mixture vigorously with a wooden spoon or wiz in a blender then return to the freezer. Repeat the process until the mixture is almost completely frozen.
