- ¼ c. flour
- 1c. quick cooking oats
- 1 T. sugar
- ½ tsp. baking powder
- ½ tsp. baking soda
- ¼ tsp. cinnamon
- ⅛ tsp. salt
- 1 c. low-fat buttermilk
- 2 T. light stick butter, melted
- 1 egg
- 1 c. blueberries
Combine flour, oats, sugar, baking
powder, baking soda, cinnamon and salt in a large bowl. Add buttermilk,
egg and melted butter. Whisk until combined. Stir in blueberries.
Coat a nonstick griddle with cooking
spray and spoon about 3 T. pancake mix onto hot griddle. Turn pancakes
over when bottoms are lightly browned.
