Ingredients
2 slicesWhole grain bread
1 largeEgg
1 sliceCenter cut bacon (or turkey bacon)
3 slicesTomato (or to taste)
2 leavesRomaine lettuce (or to taste)
2 tbsHummus (or low fat cream cheese of choice)
Optional:1 thin cut slice swiss or provolone cheese
Method
To cook your toast: Toast your bread in a toaster until golden brown.
To cook your egg: In a small skillet, sprayed with cooking spray, cook your egg over medium heat, according to your liking. (I cooked my egg like a fried egg, flipping it over to cook both sides so the yolk would not be too runny, but you could cook your eggs any way you like them for this recipe.) Season with a dash of salt and pepper if desired.
To cook your bacon: Cook your bacon to your liking, (I cooked mine in the microwave for 1-2 minutes, but you could also bake it or cook it in a skillet until crispy.)
To assemble your sandwich: Spread 1 tbs hummus (or cream cheese) on each side of the toasted bread, and layer your cheese bacon, egg, tomatoes, and lettuce on. If you want to melt your cheese, put the sandwich in the microwave for 15-20 seconds. Cut sandwich in half if desired and enjoy!
