Ingredients
4 Low carb/whole grain wraps [1]
2 Eggs
4 Egg whites (or 2 additional eggs)
1/2 cupReduced fat sharp cheddar cheese, grated
1/2 cupSalsa
1/4 tspTaco seaoning
Optional: Salt & Pepper, to taste
Method
Spray a large skillet with cooking spray. Whisk eggs and egg whites together, add taco seasoning, and salt and pepper if desired. Scramble eggs in a skillet over medium-low heat until they are cooked to your liking.
Warm tortillas in microwave for 10-30 seconds each (if desired), and divide scrambled eggs over each tortilla. Divide 2 tbs cheese and 2 tbs salsa over each tortilla, and wrap up! Serve immediately, or wrap up each tortilla in foil once they have cooled, and keep in the refrigerator for a breakfast that is ready when you are! (Note: if you are making these in advance for the week, I would recommend adding the salsa just before eating so you don't get a soggy tortilla!)
