Skinny Cottage Cheese Pancakes



Ingredients

Wet Ingredients
  • 3 eggs
  • 1 cup cottage cheese
  • 1/2 teaspoon vanilla
  • 2 tablespoons raw honey or real maple syrup
  • Dry Ingredients
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon kosher or sea salt
  • To cook
  • 1 tablespoon coconut oil, divided
  • To serve
  • 1 banana, peeled and sliced or mixed berries
  • 2 tablespoons raw honey or real maple syrup

Directions


Whisk together wet ingredients. In a separate bowl, whisk together dry ingredients.

Combine dry and wet and whisk.

Place a nonstick skillet or griddle on medium-low heat. Add 1/4 to 1/2 tablespoon coconut oil.

Place about 1/4 cup of pancake batter onto griddle with a ladle. Spread in circles with bottom of ladle to form a round pancake.

Cook for 2 minutes, or until golden on the bottom, and flip. Place on covered plate to keep warm.

Repeat with remaining batter. Should make about 8 pancakes.

Serve topped with fruit and a drizzle of honey or maple syrup. Enjoy
