3pp Vanilla Lime Coconut cupcakes!
For cake:
50g Weight Watchers dairy spread,
100g Caster Sugar,
1 egg,
1tbs lime juice,
zest of 1/2 a lime,
1tbs skimmed milk,
2tbs desiccated coconut,
150g self raising flour.
For Topping:
80g dairy spread or unsalted butter,
200g icing sugar,
1tbs lime juice & 1tbs vanilla extract.
Instructions
Whisk all the cake ingredients together at once till fully combined and pour into 12 paper cake cases in a tray. Bake at 180 degrees C for 20 mins or until golden on top. Leave the cakes to cool for at least half an hour then whip together the ingredients for topping. Spread 1tbs of the topping onto each cake and sprinkle with coconut & lime zest ?
