Cherry Poundcake with Lime Glaze



Ingredients
  • 1-1/2 cups butter, softened
  • 3 cups granulated sugar
  • 2 tablespoons lime zest, divided
  • 6 large eggs
  • 3-1/4 cups flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup fat free Greek yogurt
  • 1 cup chopped pitted fresh cherries
  • 1-1/2 cups confectioner’s sugar
  • 3 tablespoons lime juice
Instructions
  1. Preheat oven to 350 degrees. Spray two 9X12 loaf pans with cooking spray and set aside.
  2. In a large mixing bowl, mix butter, sugar, and 1 tablespoon of lime zest with hand mixer until fluffy. Add eggs, one at a time, beating well after each addition.
  3. In a medium bowl, stir together the flour, baking powder, and salt. Gradually add flour mixture to butter mixture, beating well until combined. Stir in Greek yogurt and cherries. Divide batter between prepared pans.
  4. Bake for 50-60 minutes or until a toothpick inserted in center comes out clean. Let cool in pans on cooling rack for 10 minutes. Remove from pans and cool completely on cooling racks.
  5. In a small bowl mix together the confectioner’s sugar, lime juice and 1 tablespoon lime zest. Drizzle onto cakes prior to serving.

Makes 2 loaves, 12 slices each loaf
