Ingredients
2 brown (overripe) plantains (peels brown), peeled and cut in half lengthwise and across, or into thick round slices
2 tablespoons coconut oil (unrefined)
1/4 teaspoon kosher or sea salt
Directions
Place oil in a pan over medium heat. Add plantain pieces. Cook for about 10 minutes, until soft and browned, stirring occasionally. Sprinkle with salt before serving. Enjoy!
